Joel Salatin is a full-time farmer in Virginia’s Shenandoah Valley. A third generation alternative farmer, he returned to the farm full-time in 1982 and continued refining and adding to his parents’ ideas.

The farm services more than 5,000 families, 10 retail outlets, and 50 restaurants through on-farm sales and metropolitan buying clubs with salad bar beef, pastured poultry, eggmobile eggs, pigaerator pork, forage-based rabbits, pastured turkey and forestry products using relationship marketing.

Histamine is found in mast cells. It it released to help fight infection/illness/injury, keep us awake, regulate our hormones, run our digestive system and as a neurotransmitter. Some people have unstable mast cells that release too much of it, or they just have too many mast cells. Some people have allergies which means they also have too much histamine at times. Others have too little of the histamine lowering enzymes diamine oxidase (DAO) or HNMT. An excess of histamine is involved in: allergies, histamine intolerance, mast cell activation, mastocytosis and a number of other medical conditions. You’ll find a list of symptoms here. (I have MCAD/mast cell activation disorder).

Other than being found in the body, histamine is also in food! Some foods contain it, while others trigger its release. I stick to a high nutrient, low or antihistamine diet to manage my mast cell activation disorder, without any medication. For more on which foods do what see my interview with immunologist and histamine researcher Dr Janice Joneja here. Unfortunately, beauty and bath products can also trigger histamine release,  as well as stress, vibration, altitude, chemicals and medications.

People with histamine intolerance, mast cell activation and mastocytosis may also have allergies. If they do, lowering their overall histamine could help mitigate the intensity of their allergic reactions.

Mark Kastel is co-founder of The Cornucopia Institute, a populist farm policy research group based in Wisconsin and acts as its Senior Farm Policy Analyst. He directs its Organic Integrity Project.
For almost 20 years prior to Cornucopia’s launch he was president of M. A. Kastel and Associates, Inc. His professional practice included political consulting, lobbying on behalf of family farm groups, and business development work benefiting family-scale farmers. Mr. Kastel has played a key role in a number of cooperative ventures designed to empower farmers in the marketplace. His development work has focused on creating sustainable farmer-owned businesses with an emphasis on dairy production and marketing.
Kastel played a key role in the farm community’s response to the introduction of rBGH. His watershed research, published while doing policy work for the Farmers Union, brought great media scrutiny when he revealed the fact that cows were dying and whole herds were suffering from serious illnesses soon after they were injected. He has been intimately involved at numerous stages during development of the bill to regulate organic farming in Congress, as part of the 1990 farm bill, and the subsequent rule making process at the USDA. He continues to be closely involved in monitoring the seriously flawed management of the National Organic Program at the USDA.
Kastel, who worked for agribusiness giants International Harvester, J.I. Case and FMC before making the paradigm shift to sustainable farming, lives on a 160-acre organic farm in the rugged hills of southwestern Wisconsin, near the tiny burg of Rockton.

Vitamin C Therapy: Misunderstood, Effective & Suppressed

Mega-dose vitamin C has been misunderstood, says Dr. Bush. With the revelation that vitamin C has a half-life of about 30-minutes in the human body, a fact recently documented by two other British researchers, Drs. Steve Hickey and Hilary Roberts of Manchester, emphasize the need to take repeated doses of vitamin C throughout the day to maintain blood concentrations. Hickey and Roberts book, Ascorbate: The Science of Vitamin C

( www.lulu.com/ascorbate ), reveals vitamin C concentrations can reach many times greater concentration than previously thought possible, a fact now confirmed by National Institutes of Health researchers themselves in independent studies. A more recent study, just published in the American Journal of Clinical Nutrition, an analysis of nine previous studies, further confirms vitamin C supplement users, those who consume more than 700 milligrams per day, have a 30% reduced risk for coronary heart disease compared to non-supplement users. A report in 1992 mistakenly claimed that more than 200 milligrams of daily vitamin C is worthless because excesses are excreted in the urine. That errant report has likely resulted in the otherwise avoidable loss of millions of lives.
